Classic Vegan Scones

These classic vegan scones are light, fluffy and moist - no one will guess they were made without eggs or dairy!

Quick and easy to make, you can be enjoying fresh scones within 20 minutes.

Ingredients


260g Plain flour 1Tbsp baking powder 1⁄2Tsp salt 3Tbs sugar 60g Flora vegan margarine/vegan butter of choice 1⁄2 Cup soya milk/plant milk of choice 2Tsp lemon juice Extra plant milk for brushing Strawberry jam and whipped coconut cream (*see notes) or Orley Whip, for serving


Method


Preheat oven to 220°C. Line a baking tray with baking paper.


Add lemon juice to the plant milk and set aside to curdle.


Sift flour, baking powder, salt and sugar into a medium sized bowl.

Add Flora vegan/vegan butter and, using fingertips, rub the margarine into the flour until the mixture resembles breadcrumbs or wet sand and no big lumps of margarine remain.

Add the milk and lemon juice mixture to the flour/margarine mixture, and, using a butter knife, cut it in to mix it until it starts coming together into a ball. If your dough seems too dry, add a little more plant milk, a teaspoon at a time, until it comes together.


Make a rough ball of dough with your hands and place the dough on a floured surface.

Form a rough rectangle shape, about 2 - 3cm thick.

Using a cookie cutter or the rim of a glass, cut out scone shapes from the dough.


Place the scones onto the baking tray and brush the tops lightly with plant milk.

Place in the preheated oven for 10-12 mins until golden on top.


Allow to cool for a few minutes, then split and serve with jam and whipped Orley Whip or coconut cream.


*Notes

To whip coconut cream place a tin of coconut cream in the fridge overnight.

The next day, when ready to use, do not shake the tin. Open the tin and scoop the hardened cream from the top of the tin. If you shake the tin this will result in cream that does not

whip. The cream separates from the water, and the water stays at the bottom of the tin. Scoop the white, hardened cream from the top, place into a bowl and whip using an electric beater (or by hand with a whisk) until peaks form. Use as you would dairy cream.
