Roasted Creamy Red Pepper and Feta Pasta

Serves 4


2 Tablespoons olive oil

3 Garlic cloves, peeled and chopped

2 Large red peppers

1 Cup crumbled feta cheese

2 Cups pasta ( of your choice)

Salt and Pepper

2 Tablespoons chopped fresh parsley leaves

1 Tablespoon lemon juice


Roasted peppers: Place your peppers in a baking tray, cut them into half, and drizzle with olive oil, pop in the oven at 180 degrees for 15mins while you are chopping your onion.

Heat the oil in a heavy skillet over medium-high heat.

Sauté onion and garlic until soft, about 10 minutes.

Add roasted peppers and sauté until heated through.

Remove from heat and let cool slightly. Place mixture in the bowl of a blender and add the lemon juice and teaspoon of olive oil for extra moisture

Process until combined and smooth, about 30 seconds.

Cook pasta according to package directions.

Drain, reserving 1/2 cup pasta water. Toss pasta with sauce, adding pasta water by the tablespoon, if needed. The sauce should cling nicely to pasta. Season with salt and pepper, to taste.

Divide among pasta bowls. Sprinkle with parsley and top with some hard cheese or feta.

If you are a meat lover: you can add bacon bits, steak strips, chorizo as well.
